Executive Chef

Job Summary

AX Care is looking for an Executive Chef. The successful candidate will be a highly skilled professional cook who oversees the restaurant and kitchen operations. The Head Chef reports directly to the Operations Manager and the General Manager. 


Responsibilities:

  • Provide practical assistance and direction to the kitchen/s operations
  • Supervise all kitchen employees, facilities, costs and contribute to maximizing the overall Food and Beverage profit. 
  • Control and analyze on an ongoing basis the following;

– Quality levels of production and presentation for the care home, events, a’ la carte restaurant and employee canteen

– Guest satisfaction

– Merchandising and marketing

– Kitchen Payroll and food costs

– Cleanliness, sanitation, hygiene

  • Ensures optimum performance of all the above areas.
  • Responsible for the production, preparation and presentation of all food items to provide the highest quality at all times.
  • Interact with individuals outside the unit, including, but not limited to, clients, suppliers, government officials, competitors and other members of the local community.
  • Coordinate all functions, events and activities with the Food and Beverage and Events teams.
  • Participate in the selection, training and performance appraisal processes.
  • Develop formal training plans and implement on the job training sessions for the kitchen brigade.
  • Attend and contribute to all Food and Beverage departmental meetings, amongst others.
  • Conduct pre-meal briefings and maintain liaison with the Operations Manager and the Food and Beverage and Events teams.
  • Participate in service as necessary by the requirements and practices of the operations.
  • Control stocks for daily use accordingly to ensure service requirements are met.
  • Conduct all administrative work.
  • Prepare menus and pricing and keep an up to date standard recipe file for all food items.
  • Ensure the completion of the market list following quality and quantity standards. 
  • Inspect all perishable food items received for quality.
  • Demonstrate a ‘service’ attitude
  • Take appropriate action to resolve guest complaints.
  • Demonstrate a high level of understanding and awareness of all policies and procedures related to Health and Safety, Hygiene and Fire Safety.   

Requirements: 

  • Good communication skills
  • Leadership skills
  • Reliable and efficient
  • Proactive and resourceful
  • Minimum of 3 years experience in a similar role
  • Fluent in English
  • Basic computer knowledge
