We are now seeking a passionate and knowledgeable Sommelier to join our team and elevate our wine service.
As a Sommelier at Under Grain, you will be responsible for managing our extensive wine list, providing expert recommendations to guests, and ensuring that each wine pairing enhances the flavors of our exquisite dishes. Your expertise will be crucial in maintaining our reputation for excellence.
Responsibilities:
- Guide guests through the wine list, offering expert recommendations based on taste, preferences, and food pairings.
- Serve wine with precision, following Michelin-star standards of etiquette and presentation.
- Deliver an elevated guest experience with engaging, educational, and professional wine service.
- Build rapport with regular clients and offer bespoke suggestions.
- Maintain correct wine stock levels on the floor.
- Ensure wine storage on the floor adheres to proper temperature and handling guidelines.
- Assist the Head Sommelier with wine list updates, training junior staff, and conducting wine tastings.
- Report guest feedback and trends to the head sommelier.
- Work closely with Management to create perfect wine & food pairings.
- Brief staff before service on daily wine selections and special recommendations.
- Uphold the restaurant’s Michelin star standards in all aspects of wine service.
- Ensure all wine-related tools are maintained and polished.
Requirements:
- Minimum 2–3 years of experience as a sommelier in a fine dining or Michelin-starred environment.
- Certified Sommelier (WSET Level 2 or higher).
- Excellent understanding of world wines, spirits, and beverage trends.
- Knowledge of wine storage, decanting techniques, and food & wine pairing principles.
- Exceptional communication and interpersonal skills.
- Excellent guest interaction skills
- Ability to remain calm under pressure and deliver outstanding guest service.
- High level of attention to detail and organizational skills.
- Professional appearance and demeanour.
- Fluent in English; additional languages are an asset.
- Available to work evenings, weekends, and public holidays.
