Job Summary
AX The Saint John is currently seeking a talented and passionate Chef De Partie to join our team.
Responsibilities:
- Deputize in the Sous Chef’s absence and take charge of the kitchen when directed to do so.
- Ensure that any anticipated shortages are communicated promptly to the Sous Chef or the Head Chef.
- Ensure that all dishes are being prepared to the correct recipe, correct quantity, and served as per the menu specifications.
- Ensure that all dishes reach the hot plate or passé correctly garnished, with the correct portion and size, and presented as per the prescribed standard.
- Ensure that junior cooks and trainees receive the right training and optimum guidance.
- Attend training courses and seminars as and when required.
- Work in all areas of the kitchen, for further personal knowledge and improvement.
- Ensure that all sections of the kitchen, including storage areas are kept clean at all times.
- To maintain ongoing “Clean as you Go” practices and take environmentally friendly initiatives.
- Ensure that all stocks are kept under optimum conditions.
- Be efficient, caring, and friendly in all communications when dealing with guests and colleagues.
- Strive to study management subjects in preparation for future advancement.
- Enhance and maintain the kitchen product by actively communicating with superiors.
Requirements:
- Be familiar with HACCP Standards and Health & Safety Regulations as stipulated by Law.
- Proficiency in a wide range of cooking techniques (grilling, baking, sautéing, etc.) and familiarity with various cuisines.
- Ability to follow and replicate recipes accurately, maintaining consistency and quality.
- Be proactive to the needs of the Kitchen operation, and anticipate any shortcomings.
- Effective management of their kitchen section, ensuring smooth and efficient operations.
- Demonstrate understanding and awareness of all policies and procedures.
- Perform any duties as per operations requirements as instructed by the Head Chef.
- Flexibility to adapt to changing situations and requirements in a fast-paced environment.
