Job Summary
Our MICHELIN-starred restaurant Under Grain is currently looking for a talented, passionate, and committed Floor Sommelier to join the team and manage the wine service while ensuring impeccable table service for guests.
Responsibilities:
- Recommend wines to guests based on their meal choices and personal preferences.
- Provide expert knowledge on wine pairings and suggest premium or rare vintages to enhance the dining experience.
- Stay knowledgeable about the restaurant’s wine list and assist in its presentation.
- Keep track of wines available and help with stock management in collaboration wit the Head Sommelier or Food and Beverage Manager.
- Provide thoughtful suggestions for both food and wine.
- Be well-versed in both the food and beverage offerings of the restaurant, including seasonal dishes, daily specials, and any new menu additions.
- Oversee a designated section of the dining room, ensuring that guests receive exceptional service from start to finish. This includes seating, taking orders, serving food, and attending to any needs or concerns.
- Oversee the junior waitstaff in the section, guiding them to deliver a high standard of service. Ensure that tables are properly set, service is timely, and guest’ needs are met with professionalism.
- Work closely with the kitchen to ensure smooth service. Communicate any special requests or dietary restrictions and ensure the timely delivery of food and beverages.
- Assist in training junior waitstaff on wine knowledge and service techniques, helping to elevate the overall service quality.
- Maximize revenue through thoughtful upselling of wines and additional courses, while ensuring that the recommendations meet guest preferences.
- Deliver a seamless and polished dining experience, including taking orders, serving dishes, clearing plates, and ensuring that guest needs are met promptly.
- Ensure that their section is always presented impeccably, including table settings, cleanliness, and overall atmosphere.
- Present bills and process payments.
Requirements:
- Strong knowledge of wines, including grape varieties, regions, and food pairings, with relevant certifications (e.g., WSET, Court of Master Sommeliers) preferred.
- Excellent service skills, with prior experience in a Chef de Rang and Sommelier role in a fine dining environment.
- Ability to follow and replicate recipes accurately, maintaining consistency and quality.
- Ability to multitask and manage both wine and food service for a section of the dining room.
- Strong communication and interpersonal skills, with the ability to engage with guests in a personable and professional manner.
- Excellent knowledge of English is a must.
- Leadership skills to guide junior staff in the section and ensure a cohesive, efficient service team.
